Shortcuts.
Global shortcuts work whatever app has focus. Change any of them at menu bar → Preferences… and press the new chord. Two actions can’t share one: Preferences refuses a chord that’s already taken.

Undo and redo use the standard chords so a tablet’s built-in Undo and Redo buttons work with no setup. That’s safe because LivePen only claims them while you draw. Start/stop is claimed all the time, and it is never a ⌘ chord.
On the canvas

These arrive once the canvas has focus, which your first stroke gives it. The toolbar always works.
